Stuffed Lettuce


to serve 4 people:

  • 400 gr. of Piave Fresco cheese
  • 2 heads of lettuce
  • 4 ripe tomatoes
  • extra virgin olive oil
  • apple vinegar
  • the juice of a lemon
  • a few basil leaves
  • salt and pepper to taste


Remove any bad leaves from the heads of lettuce, then wash and dry the remaining leaves. In a bowl season the PDO Piave Fresco with a pinch of salt and pepper, the juice of the lemon and the oil. Wash and dry 2 tomatoes, remove the seeds and cut into cubes.
Work the cheese with your hands until you obtain a soft dough.

Stuff the leaves with the cheese mixture, adding tomato cubes alternately as if making a pasty, dry in kitchen paper, wrap securely in foil. Put in the fridge for at least an hour. With the two remaining tomatoes prepare a sauce by passing them through a sieve, pushing everything through, then season with oil, salt, pepper and apple vinegar.
Slice the lettuce into 4 or 5 parts and dress with the sauce.

Recommended wine: Lugana - Lake Garda/Veneto.
