Zaleti (cornmeal cookies)


to serve 6 people:

  • 120 gr. Marano cornmeal
  • 150 gr. ‘00’ flour
  • 80 gr. butter
  • 100 gr. raisins
  • 100 gr. caster sugar
  • 1 sachet of vanilla essence
  • 3 eggs
  • a pinch of salt
  • 30 gr. icing sugar


Sift the two flours together and form a well, melt the butter and pour into the well with the vanilla essence and a pinch of salt. Whip the egg yolks with the sugar and also pour into the well.Begin to combine the ingredients and knead vigorously; then add the raisins after having softened them in water.

Grease a baking tray and place small amounts of dough (a tablespoon) equally spaced about 5 cm apart. Cook in a preheated oven at 180° for about 30 minutes. Serve by dusting the zaleti with icing sugar.
