INGREDIENTS (4 people)
1 kg cleaned sardines
1 kg onions
Garda extra virgin olive oil P.D.O.
1 glass of wine vinegar
salt and pepper
Dredge the sardines in the flour and shake off any excess. If sardines are not available, replace with freshly caught anchovies. Fry the fish in hot oil, taking out and draining on kitchen paper when ready, with a sprinkling of salt. Finely slice a generous amount of onion and heat in a pan in the extra virgin olive oil, adding a generous amount of vinegar when lightly coloured. In a pie dish, alternate layers of fish with this sauce called saór. Marinate for one day before eating. This special marinade also softens the bones in the fish, so that they can even be eaten whole.
